Here is the second box set from Jefferson’s Wood Experiment series.

Jefferson’s Wood started basing on 4 year old bourbon. Which had been aged in new charred white oak barrels, and finished in 13 different vessels. What’s more, there were so many combinations to experiment with. Like new bourbon barrels, new wine barrels, wine barrel heads on a new bourbon barrel; insert seared oak staves or slow cooked oak cubes, etc. Over a period of 32 months, they charted the characteristics of each experiment monthly, and analyzed how the different treatments have affected the outcome of the final whiskey.  Here in Oak and Barley, you get a chance to try 5 different samplings from this experiment.

Owner Trey Zoeller compiled Jefferson’s Wood Experiment Box Set. There are five 20cl bottles, each using different types of cask from the same batch of spirit. So you can see the effect wood has on whiskey.
