Description
The release of Balvenie 12 – 25th Anniversary in 2018, is to mark the 25th anniversary of The Balvenie Double Wood 12 years. This milestone is not only a testament to the craftsmen; Who have dedicated their working lives to handcraft Balvenie, but also to the skill of our Malt Master – throughout his 55 year career has changed the face of Scotch. And work which earned him an MBE in 2016.
DoubleWood 12 was released in 1993. Malt Master David Stewart designed a using process for it in 1982, now commonly known as ‘wood finishing’.
To make The Balvenie Double Wood, David Stewart MBE takes whisky that has spent at least 12 years in traditional whisky casks, American oak ex-bourbon barrels and hogsheads. Then moves it to oak ex-Oloroso sherry casks for an additional 9 months. After that, he transferred it to large oak vessels called “tuns” for 3-4 months to allow the whiskies from individual casks to “marry”.
The Balvenie Double Wood gains its distinctive character from being matured in two different wood types. Each stage lends different qualities to the resulting single malt whisky. Otherwise, the traditional casks soften and made it delicate. At the same time, the sherry wood brings depth and fullness. What’s more, the final few months in tuns allow the whiskies to marry harmoniously.
Tasting Notes
Nose: Sweet fruit and Oloroso sherry notes, layered with honey and vanilla.
Palate: Smooth and mellow with beautifully combined flavours – nutty sweetness, cinnamon spiciness and a delicately proportioned layer of sherry.
Finish: Long and Warming.
