To understand this whisky, one needs to understand a little bit more about sherry. Most people are familiar with Olorosso and Pedro Ximenez (PX casks). Olorosso being a rich and full bodied sherry, with Pedro Ximanez being an extremely sweet style. Aposteles sherry starts with sherry that is at least 12 years old (a mixture of both Palo Cortado and Pedro Ximénez sherries) and then it is aged for another 18 years in an Apostles Sherry Solera. As a result of this, Apostles sherry is always labelled VORS (Vinum Optimum Rare Signatum or Very Old Rare Sherry). Less than 1% of all sherry wines on the market get a VOS (20 years old) or VORS (30 years old) label.
Tasting Notes
Nose: Cherry bakewell, sugary coffee and a touch of ginger.
Palate: More coffee! More cherries (and oodles of raisins now too)! A honey’d glaze to it, too.
Finish: Ginger and cocoa – a good combination.
