Milk and Honey, a limited release of only 2499 bottles was issued in 2018 to give whisky lovers at least a hint of the product that is going to be coming out of Milk and Honey in the near future.

This spirit has been matured in three types of casks: ex-red wine, bourbon and casks that were previously used to hold a smoky Islay whisky, all leading towards a tasty and complex flavour profile.

Description

Milk and Honey is an interesting modern distilery. With a creative backstory and just about enough marketing to at least get the attention of the international whisky community.  Operations started in 2015 and in 2018 they released this, their 4th release of “not quite whisky but it will be ones day” ; a rather unique approach to revenue generation by selling underaged grain spirit.

A limited release of only 2499 bottles was issued in 2018 to give whisky lovers at least a hint of the product that is going to be coming out of Milk and Honey in the near future.

This spirit has been matured in three types of casks: ex-red wine, bourbon and casks that were previously used to hold a smoky Islay whisky, all leading towards a tasty and complex flavour profile.

Tasting Notes

Nose: typical young popcorn notes, with pear drops, banana ice cream and a hint of tequila. Honey. Light phenolic notes (peat but also a tyre workshop) in the background. Lemons, coconut and pencil shavings and light hints of yeast.
Palate: Quite rough. There are hints of very young Islay whisky (peat, sea spray). With citrus peel, crushed peppercorns, hints of mezcal and just raw spirit.
Finish: Long, but it’s mostly the peppery, alcoholic heat with little actual flavour.
Overall:  A clean but very young, rough spirit that simply needs more time. I understand the need to bring out something and make money, but this is too young and rough for such a wide distribution. An oddity, for now.
